The drawbridge between the sweet and dry aspects of this wine is a smoky/savoury nuttiness, which itself is complemented by trademark regional pepper. It's well structured, well balanced, well textured and, plainly, very good. Drink 2025-2035."
Huon Hooke, The Real Review, 92 Pts: "Medium-deep red with a glint of purple, not a saturated colour, the bouquet plummy, earthy/terracotta and building a lot of savouriness. The palate reflects this, with drying, powdery tannins and plenty of density and chew, thanks to abundant tannins. There's a fruit-sweet core. This is a more elegant, fruit-driven style of shiraz."

Adam's Winemaking Notes
The 2021 growing season was challenging with cool and wet conditions. We picked at the end of March which is later than normal but the vine yields were higher than previous years. The long slow ripening season added complexity to the wine.
Nancy's Wine Pairing Notes
It's a very elegant Grampians Shiraz, displaying it's true pepper and spice characteristics our cool climate region is known for. Pairs beautifully with a roast pork, cutting through the typical richness of the meat. I particularly like it with Korean BBQ where I find the smokiness of Korean red chili (Gochugaru), whilst spicy, doesn't overwhelm the flavour of the wine. Really good with Korean style marinated beef short ribs, straight off the grill! Yum!
