Cool climate, slow ripening, complex flavours.
“Complexity happens on the vine. Slower ripening gives the grapes time to develop those richer flavours. This is why I need to be here in the Grampians making wine.”
– Adam
The Grampians experiences a cool climate, which is ideal for growing grapes. The region’s elevation and proximity to the Southern Ocean result in cooler temperatures, allowing for a longer ripening period and the development of complex flavours in the grapes. The diurnal temperature variation, with warm days and cool nights, helps to retain acidity in the grapes and contributes to the balance and structure of the wines.

“I like wines to reflect the season and the place that the grapes were grown.”
– Adam
It’s not just the climate that makes the Grampians a wine grower’s paradise. The soil here is a winemaker’s dream come true. The Grampians region is situated on an ancient mountain range formed over 380 million years ago. These ancient sandstone and granite soils are ideal for viticulture, providing excellent drainage and encouraging deep root growth. This combination imparts distinctive flavours and textures to the grapes, giving rise to wines that truly embody the essence of their origin.
“I try and bring what’s around me into the wine, so the minerals, rocky edges, the flavours of the bush.”
– Adam
